Proof Artisanal Pizza & Pasta: A Dining Review
Neighbor Roy and I went to Proof for pizza one Friday afternoon. We entered St. Phillip’s Plaza from River Road on the north side of this shopping center and the place was right in front of us. As we entered the building, we could see that hardly anyone was there, although there were a few tables occupied on the patio and a couple sat at the bar.
Our server came to our table and we ordered drinks: hot tea for Roy and Ice Tea with lemon for me. We also ordered an appetizer: artichoke dip on fresh bread ($5).
When our drinks arrived, we ordered lunch: half pepperoni pizza and salad for Roy ($11.50) and a full pizza but half pepperoni and half sausage for me ($14).
Our artichoke dip came and Roy asked how much it was. I said $5. He grimaced and shook his head indicating that such a small sample would be that much money. I’ll let Roy tell you about his experience.
“We lunched at Proof, an upscale restaurant in an upscale shopping plaza at River and Campbell. The restaurant offers both inside and outside dining. Due to the cool weather we elected to dine inside. I would judge the interior as upscale chic. For lunch I ordered the special: one-half pepperoni pizza and I/2 plate salad. Both were excellent. The pizza was three slices of thin crust pizza with plenty of cheese and pepperoni. The salad was excellent featuring a mixture of spinach and lettuce with thinly sliced onions. A near-perfect combination and very filling. AND they had hot tea! I would rate this as a full 4 saguaro restaurant and worthy of a return visit.”
My pepperoni and sausage pizza was also excellent and I ate the whole thing. The service was also very good and we enjoyed ourselves immensely.
You might ask us how Proof ranks among our List of Top 10 Pizzerias in Tucson. I’d say Proof ranks in the Top Ten.
